Was thinking of fitting a simple hidden on/off switch in series with the stop start button.
I've done similar things in the past with other cars.

I dont have a wiring diagram for my 2019 ST but have a Haynes manual for the Mk7.
Are the ignition start electrics similar ?

How easy is it to get the start/stop button out of the dash and can you access the wiring to and from it ?

Might be just easier to get an aftermarket immobiliser installed. Entirely up to you.

I’d say the electronics are different and not to rely on the mk7 one, I can’t help with the wiring diagram for mk8, someone else might come along who can.

Try this site, it's mainly 1.0 engine cars but does have some ST stuff.

Can be a offline quite a bit too and if you do too many clicks in quick succession you'll be locked out.

I used it for dash cam wiring without any bother but I am a sparky so might be classed as cheating.
